What happens when you take the Mediterranean elegance of Watermans and throw it into the literal fire of Agnes? You get a collab so prestigious it’s almost intimidating.
Bentley Group’s newest two-hatted venue Watermans, known for its refined, produce-led take on Mediterranean cooking will be teaming up with Brisbane’s Agnes for one-night-only.
Widely regarded as one of Australia’s most influential restaurants of the past decade and recently ranked No. 4 in Australia by the global World’s 101 Best Steak Restaurants guide, Agnes, led by chef Ben Williamson, operates entirely on fire – a wood-fired kitchen celebrated for its precision, restraint and depth of flavour.
For this one-night collaboration, the menu will explore the intersection of Watermans’ coastal, Levantine-inspired cooking, Agnes’ fire-driven technique and a touch of Anyday Group’s Golden Avenue. This evening is all about a deeper story on the plate, a meeting of sea and flame, shaped by seasonality and a shared philosophy around produce and craft.

Sydney, we are levelling up with this one night only dinner. Annamese, the coastal-cool authority on modern Vietnamese joins forces with Brendan Pang, known for his dumplings and bold Asian flavours.
Since his MasterChef debut, Pang has turned the humble dumpling into a national obsession. Blending his Mauritian-Chinese heritage with a meticulous, craft-led approach, his cooking is a masterclass in precision and personal storytelling. Beyond the kitchen, Pang’s magnetic energy and “king of dumplings” reputation have made him one of Australia’s most beloved culinary voices.
This collaboration reimagines traditional flavours through a contemporary lens, balancing technical rigour with a sense of pure play. It’s an elevated exploration of Vietnamese cuisine that trades on nostalgia while pushing boundaries.

This event will have two seating times however both seating’s will experience the night together.
